I've tried both demo on 360 and ps3.

I'll only comment on the demo, thus the demo version may differ from final product.

PS3
*Loading time is 1sec faster than xbox
-doesn't play cutscenes in 60fps nor in gameplay
-1sec slower in skipping cutscenes
-Screen tearing during cutscenes
-colour and lightening all blends together, none has it's own individual lightening.
-1sec slower in skipping cutscenes.

XBOX 360
*No screen tearing during cutscenes
*Game is rich in colour, as in you can see the lightening in every object
*60fps gameplay and cutscenes
*faster time in skipping cutscenes
-1sec slower in loading

Has for the gameplay, both plays the same, Bayonetta shoots her guns same time, duration and speed at the same time on both consoles.
Only difference is Xbox has better lightening, ps3 has washed out graphics or blended lightening that you can't see the in-detail work in lightening for every object. As for the loading, obviously this is the demo, so the 360 version may load faster in final product.

But I'll be getting the ps3 version, why? Because the controls definitely suits the PS3 Controller.
I had problems trying to play Devil May Cry 4 on 360, I just couldn't pull off that much sick combos and the exploit people keep talking about.

The 360 control isn't meant for holding both L & R trigger and LB & RB at the same time. You are lightly to get cramps with the 360 controller when you play Fighting games or Hack n Slash on 360.

Japanese demo and US demo are pretty much the same just that the PS3 demo is now in engilsh which would explain the increase in file size. No one should expect Sony to waste their time trying to fix a demo if rumors about Sony helping to fix the game end up being true.
Cutscenes are only 30fps on 360.
20fps on PS3.

Neither version maintains a constant 60fps but the PS3 version does have a lower frame rate than the 360 most of the time. During the demo.

As for gameplay and cutscenes frame rate.
This may change if rumors about Sony helping to fix the game end up being true. Though there are likely to still be differences. The biggest problem being one platform has edram with a fat pipe for alpha blend(to the point that some devs consider it to be free.) and the other doesn't. If Sony does fix the problems expect an image quality difference for transparencies(the ideal solution) or game resolution(worst case).
