Well some blocks cant be broken(I Think), but for the most part use your strong attacks and move around. Some moves are also always blocked, in Sigma2 I think it was, the Flying Swallow was always blocked by certain enemies. Good Luck!... Dont know if that helped at all...

DOES ONE STRONG ATTACK BREAK A GUARD? OR IS IT THROUGH COMBOS WITH MORE THAN ONE STRONG ATTACK THAT BREAKS THROUGH A GUARD?
